This week I wasn’t able to get to my meeting because Squidge had a school performance. It’s probably a good thing as I pretty much used up all my 49 extra weekly points. So I’m working under the assumption that I’ve gained this week and I’m hoping to have stayed the same for weight watchers weigh-in next Wednesday. This is not to say that I gave up during the week. I tracked all my points and did try to eat healthy but life got in the way and I just went with it. You try to make healthy choices but eating out is rarely going to be the low point option. Weight watchers is not about denying yourself and I have to remind myself of this. Once I reach my goal weight I can’t go back to eating huge portions and not being diligent. Because Wednesdays are the beginning of a new week for me I thought I’d try something I had received from Weight Watchers. I had a very busy day yesterday and the Weight Watchers Bag’n’Bake looked quick and easy. I had taken out some chicken breast in the morning to thaw out and I had a package of stir fry veg in the fridge but in the end I thought I would use up the cauliflower I had that needed using up first. I wasn’t sure how to cook the veg and although it said to just throw everything in the bag I was worried my veg was going to be underdone so I par boiled it first. I then put everything in the bag added the seasoning mix and popped it in a preheated oven.
I think parboiling it was a mistake. The cauliflower, although it retained it’s shape was very mushy. Too much for me and I like my cauliflower soft. I also cooked the stir fry veg to boost up the meal. It was good. I wouldn’t say it was great but for an easy no fuss meal it was good. It will be ever more no fuss when I eliminate par boiling the cauliflower next time I make this. I think I’ll also add a bit of cheyenne pepper to boost it up a bit. I found it to be a little flat so a bit of spice would have been good. I know that weight watchers is marketing this for the masses so I understand why they didn’t make is spicy. Maybe if this takes off they can have a variety of different seasoning, spicy, lemon, that sort of thing.
