Chocolate chip & walnut coookies

You know when you get a craving for something and it just won’t stop until you give in?  Well, I had one of those moments and decided why fight it…

I was heading over to Sally’s for a bloggers turned friends meetup and thought some good old chocolate chip cookies where the way to go.  Also Becky had run the Color Me Rad 5k earlier so I thought a nice treat was called for. I whipped up a batch but didn’t bake it because the best bit of chocolate chip cookies  is eating them straight out of the oven. I added walnuts to these but you can always leave them out.


  • 282g plain flour
  • 1 tsp. bicarb soda
  • 1 tsp.  salt
  • 260g unsalted butter, at room temperature
  • 83g granulated sugar
  • 83g  packed light brown sugar
  • 1 whole egg, plus 1 yolk
  • 2 Tbs. honey
  • 2 tsp.  vanilla 
  • 340g dark chocolate, chopped into 1/2-inch chunks
  • 125g walnut pieces

In a bowl, sift together the flour, bicarb soda and salt.

In another bowl, using a mixer on medium-high speed, beat together the butter and the granulated and brown sugars until the mixture is light in texture, about 3 minutes. Beat in the whole egg and egg yolk, then the honey and vanilla. Reduce the speed to low and gradually add the flour mixture, beating just until smooth and stopping to scrape down the bowl as needed. With a spoon, stir in the chopped chocolate and chopped walnuts, distributing them evenly throughout the dough. Cover and refrigerate until cold.

Preheat to 180°C. Line a baking sheet w/ parchment paper. Drop rounded tablespoonfuls of the chilled dough onto the baking sheets, spacing them about 1 inch apart.

Place in oven rack and bake, for 8 to 10 minutes, until the cookies are lightly browned. Let cool and then eat!
