Spiralized Zucchini and tomatoes

I’m a bit of a kitchen gadget junkie. Seriously, I have a strawberry slicer, a dooby that I use to make shoe string strips of my carrot and a so many different zesters it’s verging on a problem. I do try to not buy every kitchen gadget I see but it’s not easy.

I knew my cause was lost when I started to see recipes popping up with ‘veggie speghetti’ and talk of spiral zucchini/courgette and all manner of squash turned into speghetti. Finally a friend of mine got one and she raved and raved about it. I hopped on line lickety-split and ordered one. I arrived on Thursday and I’ve used it twice.

I decided to go for a full on spiralizer but they come in all shapes and sizes- this is mine. It’s super easy to use and dare I admit it, fun!

They make long stands of zucchini and a couple a few c-shaped ones.

I wanted a light lunch so I simply coated a pan with Fry Light and sautéed the zucchini. A little salt and petter to taste and some chopped San Marzano tomatoes and it’s ready. start to finish 20 minutes maybe?

Spiralizer Zucchini w/ San Marzano Tomatoes
  • 1 large zucchini
  • Fry Light
  • Salt
  • Pepper
  • San Marzano tomatoes (or any baby toms)
Simply coat the pan with Fry Light, add the zucchini and toss to coat. Sauté until warmed through and lightly golden. Chop some Marzano tomatoes and salt and pepper to taste. Simples!!

    Yumm that looks really nice. I’m going through a bit of a pesto phase and would be tempted to stir a spoon in. I just need one of those spiralizer thingies!

      my first batch I used pesto along with prawns, mushrooms and peppers- was delish but less is more in this case.
