I’ve been on a quest to find a really great coleslaw recipe. It appears I am very fussy so it was no easy task to find one I ( and the entire family) liked. I ended up with a recipe that was a little of this one and a little of that one. A few people on my Instagram feed asked for the recipe, so here it is. Enjoy!
1/2 medium white cabbage
1/2 medium red cabbage
1 large carrot
1 tsp salt
1 tsp sugar
1 tbsp white wine vinegar
3 heaping tablespoons mayonnaise
1 heaping tablespoon creamed horseradish
2 spring onions, finely chopped
1. Take half a white cabbage and cut the hard woody core, discard. Slice the cabbage as thinly as you can. Repeat with the red cabbage. Peel the carrots, using a potato peeler cut strips of carrot. Slice these strips into long thin strips. Toss both red and white cabbage, along with the carrots, in a bowl. Add the salt, sugar and vinegar, toss together. Set aside.
2. Meanwhile, mix the mayonnaise and the horseradish to taste. Throw vegetables into colander- toss. Place cabbage/carrot mixture onto dish towels and press to remove any excess liquid. Put vegetables into a serving bowl, toss the sliced spring onions into the mix. Spoon in the mayonnaise and toss everything together. There you have it the Best Coleslaw Recipe Ever!
Make your own mayonnaise or buy the best you can. It makes a huge difference.
Add the wet ingredients a bit at a time. You don’t want to end up with the coleslaw being to wet.
