A few weeks ago I met friends for dinner at Mud Crab Diner in Didsbury, on the table was a condiment I had heard about but never actually tried- sriracha hot chili sauce. Sriracha has been making the round with foodies and I had been dying to try it. I ordered duck hash on a waffle with maple syrup, yes this was another flavor combination I wanted to try since seeing someone rave about chicken and waffles Diners Drive-in and Dives on the food network. I was fascinated by the sweet and savory combination, I figured this was as close as I was going to get in Manchester.
Oh my word it was amazing! I love sweet potato hash and he sweet crunch waffle and then I drizzled some of the sriracha sauce on it- orgasmic!
As you know I’m always trying to replicate restaurant foods at home- it’s cheaper than going out and I can control what goes in it and make a lower calorie version.
I decided to try to make the sweet potato hash at home and it was pretty good but what would have made it a meal I’d want to eat again was the sriracha sauce. So on the hunt for the elusive sauce I went. I thought I’d never find it but wouldn’t you know it I found it in the little American foods section of my local Tesco Express- totally random, right?!
- 2 large sweet potato, diced into small cubes
- Fry light
- 1 onion, coarsely chopped
- 1/2 tsp chili flakes
- 1/4 tsp salt
- 1/4 tsp cumin
- Add diced sweet potato, chopped onions, salt and cumin in a bowl. Spray w/ Fry Light and toss. Place in a baking sheet and bake in the oven for 30 minutes. Serve with a fried egg.
