Cheesy Veggie Bake


It’s always nice when the weather gets a little chillier to open up the family favourites cookbook and make something that will stick to your ribs!  For us it’s always something a little bit cheesy- cauliflower cheese! I’ve tweaked it a little bit and added some veggies for a little twist to the traditional recipe.   With this recipe I’ve also added some challah bread that I had in the house and needed using up. A bit of blue cheese also gives this recipe a bit of a zing.  When I make this recipe I almost alway tweak it a bit and use of things I have in the fridge- in this case stale bread and leftover cheese from Christmas.

For the cheese sauce

  • 50g unsalted butter

  • 50g plain flour

  • 450ml whole milk

  • 1 tsp English mustard

  • 1 tsp Worcestershire sauce

  • 200g Collier’s cheddar, grated

Veggie bake

  • 50g unsalted butter 

  • 2 leeks, sliced

  • ½ loaf of challah, cut into 1in cubes

  • 100g broccoli, cut into florets

  • 200g cauliflower, cut into florets

  • 100 carrots, cut into rounds
  • 50g blue cheese, crumbled

  • 100 Collier’s cheddar cheese, grated


Preheat the oven to 180C

Cheese Sauce:

melt butter in a pan, add flour and cook for 3 minutes.  Slowly add milk, whisking the whole time until  the milt is combined and the sauce is thickened.  Add mustard, worcestershire sauce and Colliers cheese.

Veggie Mix:

melt 25g of the butter in a frying pan, add the chopped leeks. Cook for about 3 minutes until softened then add to the cheese sauce. Melt the remaining butter in a pan and fry the challah. Bring water to the boil and cook the broccoli & cauliflower for about 3 minutes, drain.

Take an ovenproof dish add the broccoli, cauliflower, sauce and challah, finish with a layer of the blue cheese, colliers cheddar and challah. Bake in the oven for about 30 minutes.
