Curry- who doesn’t love a good curry? We’re big fans and love to make our own but sometimes it’s just takes a bit too long. This month I had a brainwave and I thought I could use one of the Glorious! soups as a base for a chicken curry.
We cook almost all our meals from scratch and but I have to admit that some nights it’s a bit of a push and often you’ll find us just sitting down for a meal around 8:30 and a few times way past 9pm! This usually happens on Fridays when I have Brownies (I’m a leader), Squidge has Guides and Wal cooks. He loves to make homemade curries but that means a late dinner- he never plans ahead! This past Friday he was going to make a curry and I started to moan about not wanting to eat at midnight and that’s when the brainstorm hit me! Use the Mumbai Lentil and Chickpea as the base for the curry. It was so simple and so so delish!
The Mumbai Lentil and Chickpea soup is mixed with a classic Toor Daal, spinach, a pinch of turmeric, a touch of ginger. It’s a nice thick soup so perfect with chicken. We threw some skinless chicken thighs and cooked it in the soup. It took about 20 minutes. While the meal was cooking away we prepared the usual Indian sides and in a flash we were sitting down for an amazingly meal. It’s now our go-to Friday night meal!
This is the last of my Glorious! Soup posts. It’s been a pleasure to be a Glorious! Soup ambassador and we have, hand on heart, enjoyed every single bowl of soup.
