Did you know you can pretty much chuck anything onto your waffle maker and it turns out pretty darn yummy? I know ridiculous isn’t it? But it’s true. Tonight I chucked some veg on the waffle maker and made dinner- savoury waffles!
I think it’s fair to say that we all love waffles here but have only ever had them for breakfast and the odd time we have brinner. Savoury waffles was what I wanted to make so of course I scoured the interwebs and was pleasantly surprised by the number of things you can add to make a savoury waffle. I looked through the cupboard and and pulled out things I thought would make a tasty savoury waffle. In the end I settled for white and sweet potatoes, spinach, mature cheddar and eggs. Basically a waffle omelet- a wafflelet? An omelffle? Whatever you call it the result was delicious!
There really isn’t much of a recipe for this one. I shredded the potatoes in the food processor but this can be done w/ a cheese grater. I placed everything on paper towels and dried the potatoes and then put everything in a bowl- potatoes, spinach, salt, pepper, chilli flakes and eggs. Mix everything and pop a big dollop on the waffle maker. Heat until cooked- about 6 minutes for my waffle maker. It really is that simple and the meal was a nice change.
It’s the perfect mid week meal and so simple to make. I have so many ideas and can’t wait to try a few of them over the next few days. When I Instagrammed a picture of dinner we had a lot of fun trying to find out what to call this meal- I kind of like squeaffle!
