Healthy Salmon Patties


We’re big salmon eaters and I’m always looking for different ways to cook it as we get tired of baked salmon pretty quickly. After our en croute stage, I was tasked with finding a new recipe. I found a skinny taste that looked interesting and I pretty much followed it except that I used more peppers and added carrots to bulk it up and add more veg to our diet- these salmon patties have quickly become a family favourite.

We’ve had these a few times and each time I love it more than the last time.

salmon patties
  1. 1/2 diced red pepper
  2. 1/2 diced yellow pepper
  3. 1/2 small carrot shedded
  4. 6 tbsp panko
  5. 1 tsp mince roasted garlic
  6. 250 grams salmon
  7. 1 egg, lightly beaten
  8. 1/2 tsp soy sauce
  9. 1 good squeeze fresh lemon juice
  10. 1/4 tsp sea salt
  11. Avocado
  12. 1 whole avocado
  13. 1 good squeeze lemon
  14. sea salt and pepper to taste
  15. chilli flakes (to taste)
Instructions
  1. Cut 100 grams of salmon, blitz in a food processor.
  2. Finely chop the remaining salmon.
  3. combine the salmon with the peppers, shredded carrot & breadcrumbs.
  4. In a small bowl, combine egg, soy sauce, lemon juice, mince roasted garlic paste and salt- add to salmon mixture.
  5. Combine well and form into patties, refrigerate.
  6. While the patties are chilling dice the avocado. Add a good squeeze of lemon, salt and chilli flakes. Mix and smash the avocado to desired consistency.
  7. In a non-stick pan lightly coat with preferred oil. Over a medium head cook patties until lightly golden, around 4 minutes.

    OMG these look delicious! I had a real salmon addiction last year (no joke) when I was on Slimming World, so I think I’ll try these out.

      you don’t like fish?! I’ll pretty much eat anything that doesn’t eat me first 🙂
